I was wondering... why a character should choose to abort to a roll with a punch instead of a block?
With the block maneuver, you don't have the -2 malus on the roll against the foe's OCV, and if you succeed, you avoid
all the damage.
Or is it possible to roll with a punch also after an unsuccessful block (declared or aborted to)?

As the description of the maneuver explains, a character can declare a Roll With A Punch after being hit. That's something Block can't do. It's not possible to use it after an unsuccessful Block, but it is possible to, for example, decide not to Block in the hopes the attacker will miss, and then RWAP if the attacker hits.
