I knew the avatars changed on all your posts if you changed them but why are the sigs changing. I have a whole list of quotes for my sig line so I can use a new one each day, its no fun if they are going to change on all my posts everytime I change them.

As I understand it, that's the way vBulletin works. That's how it can keep track of posts, for example. When you make a new post, it updates your post total in all your posts, IIRC. The same is going to apply to sig changes.
If Ben has other info, I'm sure he'll post. :)

My eariliest posts on the new board were without a signature at all. When I added an avatar the old posts were updated with the avatar. When I added a signature the old posts were not updated and remain signature free.

When you posted without a signature, you (effectively) had disabled the option of "Show Signature: include your profile signature. Only registered users may have signatures."
This means that regardless of what you change your sig to, those posts will still be flagged as "do not show my signature".
However, posts that are flagged to show your signature will do exactly that, regardless of what your signature may happen to be at the time.
The same thing happens with avatars, status, etc. If you change your avatar, it will change in all of your old posts. If your status changes, it will change in all of your old posts. And so on.
