Sentinel write-up

Aside from the Great Net Book of Real Heroes, has anybody written-up various Sentinel models (Marvel's mutant hunting machines) or is there an equivalent in the CU sourcebooks?

If you can get access to the Fourth Edition Champions sourcebook The Mutant File, the organization Genocide (the equivalent to the Institute for Human Advancement in the 4E Champions Universe) also used Minuteman robots, and the one written up there is extremely powerful.

Speaking of Genocide and Minutemen, here's a nice set of stats for a Genocide-era model (for 4E HERO System). It's less powerful than the one in TMF, but more versatile than the model depicted in 5E Champions Universe mentioned above, and could stand in well for most X-Men Sentinels: http://www.patric.net/morpheus/cast/hero/markix.html

One point to note about all these robot write-ups is that they lack computer brains, so by the rules they should be much less adaptive than Sentinels are usually depicted.

While not out of the sourcebooks and it is (I believe) 4th Ed but for a sort of Nimrod like stealth version you might want to take a look at:
