I seem to be full of questions lately, and I do feel particularly stupid asking this one, but I was surprised that it wasn't explicitly answered in the Book.

If one is using the Absorption as Defense option, and has already Absorbed up to the max, does the defense still work?

No — if the character can’t Absorb (for whatever reason, including having reached his maximum), Defensive Absorption doesn’t provide any defense against attacks.
