Partly it's a generational thing: prior to the 1990s, really, astronomical datasets were dominated by systematic errors, not random ones. When that's true, all a statistical argument can do is give you false security about working with biased data. The rise of automated telescopes and large automatic observing programs finally gave us data where the statistics actually meant something. But since I finished my classes in about 1982, there wasn't need to train me in techniques whose use were of questionable utility given the state of the observing art. I had automatically assumed that incidence was the partial derivative of cases with respect to time (and the age-related incidence the partial derivative of the number of cases with respect to time evaluated at specific age bins), but that isn't quite right, because in the real calculation of incidence it seems that the population is assumed to change.
