The restaurants were sold to Darden in 1995, and fresh pasta was one of the first casualties. Still, we used to go to Olive Garden fairly often, usually for certain favorites that have been slowly removed from the menu. Now, I get a craving for it about once or twice a year*, and I'm most likely to order the same thing (often to go). Last time, I couldn't figure out why the pasta had no flavor, but reading the article, the lack of salted water to save the pans is probably the main reason. Certainly, the sweetness of the meat sauce didn't help. *The solution is to make it myself. My Grand-Mere's recipes sometimes had messages like, "Serves 4, or two people who want to eat". My problem is that when I cook, I'm still making batches for the "people who want to eat", rather than just myself. Shortly after my housemate passed away, I had made a batch of American Chop Suey**, and ended up freezing most of it, and then eating it again for several meals a week for the rest of the month. A similar batch made when he was alive would have been gone in about 2-3 days. We used to say that he was like the dinosaur that lived under the sink in the Flintstones. **A recipe that's probably most familiar to New Englanders, this one from Food Network is pretty close to the version that I make, though mine's not written down.
