It's disappointing that they're having these problems, but first, they're doing something unprecedented, so some teething problems are to be expected, and two, they're consistently bringing the booster to the barge and making soft contact, so it's clear that the goal is achievable. I wish them luck!

I think everyone is assuming it's predominantly water ice, but other stuff could be there too. In fact, It'd be especially interesting if other ices were there; it would indicate Ceres formed even further out than people are thinking now (and they think its orbit now is substantially sunward from where it formed).
