Otherwise, the wine will taste sour or bitter. I used to have a regular wine shop when I was working in San Francisco. Alas, it was destroyed in a fire when the restaurant next door burned down. I grew up with Gordon's Gin and could not abide it. But having in later years tried Tanquery and Bombay Sapphire, I can now drink gin. Which is always nice with tonic water.
