Chicken roulade is chicken meat with a filling, rolled up. Prosciutto and swiss? Duxelles? Chopped dried apricots and cranberries and nuts? Whatever your pleasure. I typically do a duxelles...mushrooms, with bacon and onion, cooked to evaporate much to most of the moisture in the onion and mushrooms, to intensify the flavor. It was the hotel restaurant, Watertable ( Baltimore Renaissance Harborplace). Also tried their home-made potato chips with garlic aioli but was too stuffed for dessert either time. I wanted to try some seafood given where I was, but holy mackerel! The prices were astronomical at all three places I went to.
