I had fried rabbit in tech school in Biloxi Mississippi. It wasn't very impressive, but it wasn't awful either. It was sort of like chicken, and not so different from other things you may have eaten as to be disgusting. Their attempt at chitterlings (chit'lins?) was more typical of military fare at the time: greasy and awful, putting me off tripe for years.

Squirrel falls under the same umbrella as quail to me: too little meat to be worth picking it out of the bones and inedible parts. But in my experience raccoon is indistinguishable from slightly stringy roast beef, and you get the added satisfaction of eating something that deserved to die rather than a helpless inoffensive creature.
